CHICKEN CORDON BLEU

In episode 2 ofCooking with Alli” Allison prepares a classic dish. The name Cordon Bleu comes from French origins meaning “Blue Ribbon” however the dish itself is Swiss. A crispy chicken breast filled with ham and cheese makes for beautiful multiple layered textures and flavors. Allison worked on her knife skills, tenderizing the chicken, and use of an egg wash. She prepared an excellent meal and adds a great recipe to her repertoire.

Ingredients:

1 8 oz. Chicken breast: cleaned, butterflied, and tenderized

2 slices of maple honey ham

2 slices of smoky bacon cheddar cheese

2 eggs beaten

1 cup of flour

1 tbsp. paprika

1 cup of bread crumbs

1 tbsp. of olive oil

Method:

  1. Preheat your oven to 350 degrees
  2. Take the chicken and place on a piece of plastic wrap
  3. Place ham and cheese on one end of the tenderized chicken breast. Roll chicken tightly pulling back the plastic wrap and folding over the chicken forming a tight roll. If you have time keep wrapped overnight in the refrigerator.
  4. Use the egg wash method. Unwrap and place the rolled chicken in seasoned flour on the entire chicken. Shake off the excess flour and then place chicken into the beaten eggs. Cover chicken with the eggs and shake off the excess. Then place chicken into the bread crumbs and coat the entire roll of chicken.
  5. Place olive oil into a sauté pan and set to med/high heat. When the oil is hot, place chicken seam side down into the pan and fry to a golden brown on all sides.
  6. Place chicken in the oven for 10-15 minutes depending on how thin you tenderized your chicken
  7. After chicken is cooked through, slice and serve.
