COOKING WITH ALLI: EPISODE 5 – PULL PORK TACOS

In episode 5 of “Cooking with Alli” Allison prepares a savory pulled pork taco. It will be served in a floured tortilla, and topped with a mango salsa. The origins of taco started in Mexico as a food for the minors in the 19th Century. Tacos were used as an easy food for the worker to handle and get a quick bite. Tacos have evolved over centuries and are probably one of the most versatile foods out there today. This is not Glen Bells tacos (founder of Taco Bell); Allison works with fresh ingredients and homemade floured tortillas.

INGREDIENTS:

2.5 lbs of Pork butt/shoulder, trim fat and silver skin

¼ cup of Paprika

1 cup of Brown sugar

¼ cup of Sea Salt

1½ cups of Orange Juice.

Mango Salsa:

1 Mango, diced

1 Red Bell Pepper, diced

½ cup of Cilantro, rough chop

Salt and pepper to taste

The juice of one lime

Floured Tortillas: Makes 16 Tortillas

2 cups all-purpose flour

¾ cups of Water

3 tablespoons of olive oil

½ teaspoon of Salt

TC 56 Chipotle sauce: Buy some!

Method:

  1. Preheat your oven to 450 degrees.
  2. Put dry rub of paprika, brown sugar, and salt on you pork butt/shoulder. Make sure you work rub in the entire piece of pork. Place pork onto a sheet pan and cook in the oven for 1 hour to let the seasoning bake in and caramelize.
  3. Placed orange juice into crock pot and then the pork. Put the heat on low and cook 24 hours. Low and slow.
  4. The next day take two forks and shed the pork. Leave in the juice until its ready to serve.
  5. Take your mango, red pepper, red onion and placed in a bowl. Squeeze in the juice of one lime and mix together. Sprinkle in the cilantro, salt, and pepper. Mix again.
  6. In a separate bowl combine AP flour, water, salt, and olive oil. Combine ingredients with your hands and knead dough for 10 minutes unit you have a smooth ball.
  7. Divide the dough into 12-16 balls depending on how big you want your tortilla.
  8. Roll out each ball of dough flat and thin. It doesn’t have to be a perfect circle. Once the dough is to our liking place it into a medium heat cast iron skillet. Cook for 30 seconds on each side to make them still pliable to fold.
  9. On a plate place your soft tortilla, drizzle on TC 56 Chipotle sauce, place pulled pork in the center, and top with mango salsa. Enjoy!
