PEANUT BUTTER PUDDING PIE

In episode 6 of “Cooking with Alli” Allison expands her cooking arsenal into the dessert course. Allison prepares a 4 layer dessert of a pretzel crust, a light and fluffy peanut butter mousse, creamy chocolate pudding, and topped with fresh whipped cream and dark chocolate Chips. Everything was prepared homemade and fresh. We hope you make and enjoy!

COOKING WITH ALLI EPISODE 6

INGREDIENTS:

Chocolate Pudding:

1 cup of white sugar

3 tablespoons of unsweetened cocoa powder

¼ cup of cornstarch

1/8 teaspoon of salt

2 ¾ cups of milk

Peanut Butter Mousse:

6 Oz of cream cheese

¾ Cup of creamy peanut butter (2 cups of dry roasted peanuts & 2 tablespoons of honey)

1 Cup of heavy cream

½ cup of powdered sugar, sifted

1 teaspoon of vanilla extract

Whipped Cream:

2 tablespoon of sugar

1 cup of heavy whipping cream

Pretzel Crust:

2 cups of your favorite hard Pretzels

6 tablespoons of melted butter

Method:

Chocolate Pudding:

  1. In a sauce pan on medium heat put the cocoa powder, sugar, cornstarch, salt, vanilla extract, and butter. Whisk ingredients together.
  2. Then slowly whisk in cold milk and bring to a boil while constantly whisking. Pudding will begin to thicken up. Place mixture into a chilled bowl, put in the refrigerator, and let pudding set.

Peanut Butter Mousse:

  1. With an electric mixer beat together peanut butter and cream cheese until smooth.
  2. In a separate bowl whisk heavy cream, powdered sugar, and vanilla until it has whipped cream consistency.
  3. Take half of that whipped cream and combine it with the peanut butter and cream cheese mixture.
  4. Then take the second half of the whipped cream and fold it into the mousse.

Whipped Cream:

  1. In a cold mixing bowl combine heavy whipping cream and sugar. Whisk together until you get stiff peaks

Pretzel Crust:

  1. Place hard pretzels in a zip lock bag and seal. Take a rolling pin and crush pretzels until they are coarsely ground.
  2. Melt butter in a pan and add ground pretzel. Fold in the butter with the pretzels.
  3. Take your crust and place in a pie dish. Press down the crust to cover the bottom of the pie dish.
